Zucchini Sloppy Joes–from 365 Easy One Dish Meals

OOOPs! I forgot that I altered it a teeny tiny bit and I added a chopped yellow summer squash.

Listing Lunch & Describing Dinner

1 pound hamburger
Cook.
Then Add:
1 medium or half of a large Green Pepper, chopped
1 medium onion, chopped
1 medium zucchini, chopped
2 plum tomatoes, chopped
And Cook until onion is tender–changes color to a more clear, not exactly browned.

Then add:
1 8 oz. can tomato sauce
2 Tablespoons ketchup
1-2 tsps. Worcestershire sauce
salt and pepper
You all liked me to sprinkle in a tablespoon of organic sugar here.
Heat to boiling, stir, reduce heat to low, simmer 10 minutes. (tip:if it is still too runny increase heat to boil off the liquid but stir at all times so as not to scorch.)

Original recipe suggest serving over toasted English muffin halves and eating as open faced sandwiches.
Mostly we ate it on whole-wheat buns.

  1. I do love sloppy jos and barbecues. Am going to make a vegetarian sloppy jo with pinto beans and quinoa with week. Have been known to disregard my mostly-vegan diet for pulled pork, though! Had that in Florida at a Jamacain reggae party that we went to.

    • The kids like the quinoa pinto bean sloppy joe mix, though the like parsley instead of the soap herb cilantro. Poor K’s kitchen at school used my page to make it for her and she had to have 4 batches with cilantro as I forgot to modify the recipe so that others too, could make it taste like Mom’s!
