Savoy Cabbage Slaw a la Around The Southern Table

1 cup plain yogurt
1/2 cup mayo
1 T. plus 1 tsp. apple cider vinegar(brown kind)
salt and pepper, to taste
Pinch of cayenne, (don’t put your finger in your eye till you wash wash wash!)
1 very small head savoy cabbage OR ask the produce person to cut one in half for you.

Mix sauce in the bowl, taste for seasoning.
Make a flat part of the cabbage by slicing some off, this will keep it stable so that you can cut cleanly without cutting yourself. Put a wet paper towel under your cutting board too. Slice very thinly (chiffonade) Then make 2 or 3 cuts across the slices, to make for better fitting into the mouth.
Add cabbage to the sauce mixture, toss to coat. Sometimes, washing hands very well and tossing with them is better than with spoons.
