The new flour mix appears to work!!! The dough only stuck a little, and I halved the recipe which can give me fits on a normal good day. The humidity is also a factor for which I haven’t yet learned to adjust! I am heating the oven to bake it off now and if it works!!??!?! Coconut Cream Pie!!! woohoo I am so grateful and becoming more glad that I spent the funds to get the flours!

The piecrust was amazing–now I don’t have to buy frozen ick gf ones!
The coconut cream was a wee bit loose and I can adjust that for next time.
